Even though I try to write recipes and stories I never imagined writing about food can be so hearwarming till the time I read about Marcella Hazan recently. Here is a lovely quote from her.

The explanation is that I consider cooking to be an act of love. I do enjoy the craft of cooking, of course, otherwise I would not have done so much of it, but that is a very small part of the pleasure it brings me. What I love is to cook for someone. Recently I read about  this great Food Writer Marcella Hazan and I am inspired by her . Here is a lovely quote from her. 

Winter is the season when nature sheds some old stuff and gets ready for rejuvenation. We light up our dim and foggy evenings with Christmas lights and look forward to welcoming Santa, The Saint of Hope. Foodies and content creators are having a great creative time making all types of creative cookies and showing them off on their social media with pride. Creativity is at an all-time high during the festive season!

Here in my city, we are bestowed with an abundance of winter veggies and fruits.

Vegetable carts are loaded with Carrots and Green peas. There is also an abundant supply of Strawberries. I have already made strawberry jam  and enjoyed some fresh and warm directly from the skillet.Now is the time for indulging in juicy carrots and fresh green peas.  Here is a warm and spicy soup to light up our holiday season.

 

Carrot Ginger Soup
 

We all know the health benefits of carrots and ginger. Carrots are rich in fiber, which helps in controlling blood sugar levels. The beta carotene in carrots is beneficial for the eyes. Carrots are also loaded with Vitamin A, Calcium, and Vitamin K. This, in turn, helps in improving bone health.

Ginger contains Gingerol, natural oil which has medicinal properties. Ginger adds flavor and aroma to the soup.

We also add spices like bay leaves and cloves to enhance the flavor and zing of our carrot soup. So let’s go ahead and make this delicious. let us add some spice and warmth to our winter mornings with this delicious  Carrot GingerSoup.

Ingredients:

(Servings 4 cups)
1.       500 gm carrots

2.       1-inch piece ginger

3.       1small onion

4.       One or two bay leaves

5.       Few cloves

6.       Few black pepper pods

7.       2 tablespoon crushed garlic

8.       2 tsp butter

9.       Salt to taste

For Garnish fresh cream, parsley, white sesame.

PREPARATION:
 

Wash and peel carrots. Chop them into one inch cubes. Peel ginger  and onion and cut them to small pieces. Finely chop garlic.

Take a pan. Add butter and melt it. Now add dry spices and sauté for two minutes. Add onion, garlic and ginger. Cook till onions are lightly brown. Add the chopped carrots and roast them  for two to three minutes. Add 3 cups water . Cook till the carrots are soft. You can use a cooker too. Cook  upto three whistles. Strain the stock and keep it aside. Remove the bay leaf. Make a fine paste of cooked vegetables.  Seive the mixture to  a pan. Add the stock and bring to a nice boil. Garnish with few spoons of fresh creame, parley and white sesame.

PS: Vegans can try using coconut butter in the place of butter.
