Making the popular Indian dessert known as Carrot Halwa (a.k.a. Gajar Ka Halwa ) will be so simple to make when you use my detailed step-by-step guide. I have covered all with detailed step-by-step photos in this helpful post.
1.First rinse and peel 750 grams carrots ( 9-10 medium-sized tender, juicy carrots or 7-8 long carrots).
2.Next, grate the carrots with a box grater. You will need about 5 to 5.5 cups of grated carrots.
3. In a kadai or wok, add all of the grated carrots.
4. Pour in 5 cups of full-fat milk. Now, Switch on the burner.
5. Next, Mix the carrots and milk together.
6. Cook that mixture on a low-medium flame. After a few minutes, the milk will begin to give foam and then start slowly reducing.
7. Keep stirring this halwa mixture.
8. Cook the mixture until the liquid is reduced by 75%.
9. Add 5 tablespoons of ghee into it and mix it very well.
10. Next, add 12 to 13 tablespoons of sugar, or to taste.
11. Add cardamom powder – 7 to 8 green cardamom pods powdered finely in a mortar-pestle or about 1 to 1.5 teaspoon pre-ground cardamom powder and mix it properly.
12. Continue to simmer on a low flame and stir it properly. Simmer till the gajrela mixture starts to thicken and reduce more.
13. When the halwa is reduced to a pudding-like consistency then add nuts and dry fruits of your choice. I have added 15 cashews, 15 almonds, and 4 tablespoons of golden raisins. Mix it very well.
NOTE: Chop the nuts before you add. Raisins can be kept whole. If using saffron, then you can add at this step.
14.Simmer till the halwa mixture becomes dry. The milk should evaporate completely. You will also see some ghee being released from the sides.
15.Here, your hazar ka halwa is ready. Serve gajar ka halwa warm. Garnish it with some chopped dry fruits of your choice while serving.
